Homemade Tahitian vanilla bean ice cream & cookie sandwiches

This is almost too easy. Almost.

The traditional ice cream sandwich is made with ice cream and a chocolate wafer. But we’re not doing tradition today. No, we’re in the mood for the hipster version, which substitutes a cookie for the wafer. Actually, you could make it easy with varying degrees of shortcuts, so to speak.

So the shortest-cut version would be to use store-bought ice cream and store-bought cookies and make a sandwich out of them. And, make no mistake, that would be very easy and very delicious. Am I right? Especially with all of the exotic ice creams and cookies available to us these days.

The next short cut would be to make the ice cream and buy the cookies, or vice versa. If you choose to make ice cream, check out our Homemade Tahitian Vanilla Bean Ice Cream recipe. Or, if you decide to make the cookies, check out the fab recipes on our Cookies with Vanilla Pinterest board. How about Chocolate Chip Cookies with Tahitian vanilla sea salt caramels, or Whole Vanilla Bean Cookies, or Vanilla Bean Snickerdoodles, or Pumpkin Cookies (we’re already thinking about fall). You see where this is going.

Of course, if you’re feeling like doing it all yourself, go for it! You are only limited by your imagination. Here are more ideas and fantastic recipes on our Vanilla Ice Creams & Gelatos, and Ice Cream Sandwiches Pinterest boards.

Now that wasn’t too hard, was it?
